Chicken Adobo

Some say my mom's version is the best, while others believe that my Lola's takes the cake... but wait a minute, what about mine?!


  • 2 lb Chicken thighs with bone and skin
  • 2 cup garlic, minced
  • 1 qt swan dark soy
  • 2 bottles mushroom soy
  • .5 cup sriracha
  • .5 cup sesame oil
  • .25 bottle calamansi
  • 1.5 bottle oyster sauce
  • 3 qt datu puti vinegar
  • 2 tblsp pepper


  1. Combine all ingredients into hotel pan except for the soy and the vinegar
  2. Coat and massage ingredients into the chicken
  3. Once finished coating the chicken, add vinegar and soy
  4. Cover with foil and fully place in oven at 375 degrees for 1.5 hours
