Poke Bowl

Since this was the biggest menu item to hit the culinary world in 2015, I obviously had to represent my take on this (still) very popular item!

Recipe Ingredients

  • 1 tblsp sweet miso
  • 2 tblsp honey
  • 1 tblsp calamansi
  • .25 tblsp soy sauce
  • 3 oz. sushi grade tuna
  • .25 tblsp sriracha
  • .5 bottle oyster sauce
  • 1 tsp sesame oil
  • 1 tsp lemon juice

Plate Assembly Ingredients

  • 2 oz carrots, julienne
  • 2 oz scallions, julienne
  • 2 oz fried wonton pieces
  • 2 oz pickled onions
  • .25 pc avocado, fanned
  • 1 cup steamed rice
  • 2 oz coconut milk
  • 1 tsp sesame seeds


  1. In a large mixing bowl, combine all ingredients that are in the plate assembly. Mix until fully integrated.
  2. Set aside in fridge and let cool while making the rest of the bowl
  3. In a small mixing bowl, combine steamed rice and coconut milk and stir until all milk is absorbed in rice
  4. In a small bowl, place rice on base
  5. In small portions in the bowl, place the Plate Assembly items around the edge of the bowl leaving a circle exposed in the center of the bowl
  6. Plate the sauce and tuna in the middle of the exposed rice
  7. Garnish the sauced tuna with sesame seeds and a little salt on the avocado
